Triple Chocolate Cake

So, my niece is having her birthday last Sunday. Two weeks before her birthday I decided to bake her a cake as a birthday gift. I guess when it is a gift, you need to make it special. I remember saw similar cake online few years back & I decided that it will be the ONE. But instead of using KitKat, I opted for love letter. But I found out that if you want to use love letter, make sure you eat it as soon as you finish decorating it because it won't be as crunchy as it should be after being expose to air for few hours. 

You can replace it with KitKat of course..or sponge finger biscuit or that sour stick biscuit (no idea whether there is any special name for it). Well basically you can use anything as imagination know no boundaries. 

For the cake, I decided to do triple chocolate cake. I could see that the cake is moist and the texture is smooth. Didn't get to taste it but the tasters said the cake taste NICE!. *wink..wink* . For those who want to try, here's the recipe,

Ingredients:
1 cup of all purpose flour
1 cup of brown sugar
1/2 cup of buttermilk
1/2 cup of fresh brewed coffee (Nescafe pun bolehhh)
3/4 cup of cocoa powder
1/2 cup of vegetable oil
2 eggs
2 tsp of baking soda
1 tsp of baking powder
1 tsp of salt
1 tsp of vanilla extract

Sorry there is no step by step pic ya. X sempat nak ambik. Coz baking & layan baby at the same time. Huhhu...

First as usual, mix all the dry ingredients in a bowl (flour, brown sugar, cocoa powdeer, baking soda, baking powder and salt). Then mix all the wet ingredients in another bowl (buttermilk, vege oil, eggs and vanilla extract). Mix well using medium speed hand mixer until semua sebati. Then add the coffee. Lepas tu, add dry ingredients into the wet ingredients gradually and stirring continuously to avoid lumps. When everything has been mixed well, proceed to the next step that is to make the chocolate syrup.

You need;
2 tsp unsweetened cocoa powder
1/3 cup of sugar
1 tbsp water
1/2 cup of chopped bitter sweet chocolate or chocolate chips

Mix all the ingredients in a pan and heat for 1-2 minutes or until melts. Scooped the chocolate chunk syrup and swirl using a knife until the mixture is fully incorporated. Pour the batter in a baking tray and bake for 40minutes on 180C temperature. Once the cake is baked, cool it off before covering it with frosting. You need the frosting to stick the love letter. Kira cam gum la frosting ni. You can used any frosting tapi yang paling sesuai will be chocolate buttercream or chocolate cream cheese frosting.

The rest I must say...USED YOUR IMAGINATION! As for me...here's the results...

The cake is very easy to do. The decoration part might take you sometimes and it need to be done in a proper manner. Kena remain calm buat ni...baru cun!

Fondant 2 tier cake

My husband just celebrated his 40th birthday. Months before the birthday approaching, he already talked about it that he need to have some celebration and invite few close friends and relatives. Reaching 40th years old is some kind of a milestone age, well at least from where he comes from. Because I know, from where I come from, 40 or 50 or 30 years old, doesn't mean anything. It's just another age.

So, as the day approaching I decided to do a special cake for him. I never tried my hand on using fondant when making cake before. So, I would like to try this time. And I also never make a 2 tier cake photo cake. So, I bought some of the ingredient from M'sia and brought it all the way to Denmark. Thank God I bought the fondant in M'sia because it is so damn expensive in Denmark.

On the day before his party, I woke up early in the morning & start doing my thing. I decided to do 2 tier rainbow cake with edible picture and frost it using fondant. Since it is his 40th birthday, I think it will be a memorable if I commemorate his life in a cake.
 I wont show how the batter were made as I assume everyone know how it was made. This is just a normal butter cake. The only different is the variety of colour involved.
 Actually the cake is not so thick, it's very think. So, 7 layer of cakes is not actually as high as I imagine it will be.
 There goes, five colours is ready. Now getting ready to do the frosting.I just used the usual vanilla butter cream icing. It is easy to do and it's good as  a 'glue' for the fondant. The fondant was very hard! Man..if I have to rolled it everyday, for sure my arm is way muscular! Hahaha...so, I have to ask the birthday boy to help me.
This is the top layer. It look so smooth! I love using fondant except the rolling part. But I wish I have the fondant levelling tool. Then I believe it look more sharp and smooth. But for now, this is good enough.
 Ok.I didn't take picture for the 1st tier. So, here the almost finish 2 tier rainbow cake with edible picture. As you can see, there is a picture of my hubby when he was just a little baby. I got all the picture from my MIL. She gave me these pictures years ago so I get to see how my hubby look when he was a young boy.
 There was a picture of my in law too, it was taken during their trip to Sarawak. There is his picture with his favourite dog.
 I don't like to do piping because it involve too much icing & most of the time, the icing is wasted. So, luck for me, I have this edible chocolate lettering. Luckily I have enough alphabet for all the wording I need.
 Yes, our wedding picture also included & my favourite picture of him, the one on the left, using the bell bottom pants.:D

 Brought the candle from KL, just in case I have no time to search for it here. And that is the whole cake, the finishing touch. I am so happy with the outcome & I received huge compliment for the presentation. It took me almost 12hrs to finish all of it. Man that is tough! hahha..but for my husband, I'll do it again.
This is how it look like, rainbow cake. Ok..not exactly the actually rainbow colour but it will do.I realised that the colouring here is not as strong as we have in M'sia. Talk about healthy conscious.

HUbby turn 40!

Last month my hubby turn 40 years old. We had a party for him & invited close friends and relatives. We held the party at our own home. We have one room that used to be part of the barn but renovated into a function room where we can do party without me having a stressful moment having lots of people in the house and feeling depress after seeing all the mess.
 Previously the place was full of stuff. When we stay abroad, the place was used as storage room. But now, all things has been clear up & re-arrange. What is not useful anymore, has been given to the boiler. I think this room can accomodate up to 40 people at one time. There are Dj corner & bar too.
 The Dj corner. The selection is not bad because most of the record or cd are from the 80s or early 90s era. My kind of music. Wish I can find some Malaysian group black record and bring it here. It be nice to listen to it & think of the good old day when things are left complicated & complex.Hehheh
There is a bar as well although not your typical design of a bar. But nevertheless, there are variety of liquor that you can choose. After we set the table, I add up with few flowers to make the ambience lively and as if we are eating in a restaurant.
Most of the foods are prepared by us with the help from my in law. Only the main dish, which is half a pork was order from someone else but hubby need to do the cutting himself because it quite pricy to hired someone just to slice the pork!!
 So, hubby has to do it himself. And gosh it is yummyyy...
 Table for appertizer, salad, nuts, dressing among others.
 Guest are busy entertaining themselves with each other or with the food. There are 30 people being invited and I think 20+ came. They all enjoy the foods & drinks. Free flow of beer and liquor as well. The last group of guest leave at 130am & I am ready in bed by 1130pm. Hahha
 Mr piggy that was slaughtered that day. And it was delicious!
 As usual, I almost every year I will bake my husband's birthday cake. When I have the time, I will always bake his birthday cake & it is always special every year. This year it is extra special because it's his 40th birthday. So, I decided to bake a 2 tier rainbow cake using fondant. I have to personally brought the fondant from M'sia, which I am glad that I did because it is not so easy to find and if you do find it, it is sell in a 250gm pack, with a price tag equivalent to 1kg that I bought in KL. I also decided to try doing picture cake for his birthday so I have the picture printed earlier in KL and brought it here. The cake was a great FINALE for the party because everyone just in awe! Not only it look good, it also taste good!

At the end of the day, everyone is happy and gone back with belly full of foods and drinks. Happy Birthday Honey!

Min foedselsdag


It is the time of the year again to celebrate my birthday or min foedselsday in Danish. Just like the year before, I don't look for anything special because I am special! Guess that is enough for me to celebrate. But the bonus is that, I get to be with Kris for the celebration. On a normal birthday basis, we would get a cake or normally I bake for him and went out for a nice romantic dinner after (that is if we are near each other on our birthday). This year, he decide to bring me to Tivoli in Copenhagen (though actually he has something to attend there & decide to stop by at Tivoli).


Tivoli is Denmark biggest theme park and every summer the place is jam pack with human being from all over Denmark and also other part of the world. I was there the first time during the summer of 2009 or 2010 (can't recall). I don't really enjoy it because there is just too much of people to actually enjoy it. Furthermore, from my observation Tivoli has more eating joint that games! I went to another theme park in Copenhagen previously (which I forgot the name) & I found it is way better than Tivoli.

Anyway, it was raining on that day and we arrived at the park at 3pm. Since it's winter, the day get dark very early. What I really look forward for in this trip is I am excited to see the Christmas decoration which Tivoli has every year. This year Tivoli Christmas decoration will be base on the theme, 'Russian Christmas'.

Few hours walking in the park & do some small shopping, we are on our way back to Aalborg but need to make a stop at Herning to pick up our stuff as that is when Kris got the phone call asking him to fly to Rotterdam the next day. We didn't get to do the romantic dinner thingy as usual/tradition of our birthday celebration but what the heck. Nothing to complaint about coz we still have time to have that dinner before I fly back to M'sia.

My 32nd birthday

It is time of the year again when we celebrate and adding another year into age. Supposedly, it make us a year wiser every year with each celebration & personally, I do feel that I am getting wiser by the year.Hahhaha...


For the second time, I celebrated my birthday in China. No special celebration or anything grand about my birthday, just like all the previous birthday I had but this year I am happy that I get to spend it with my husband. Last year, I had to spend it alone so it should does make a different this year. Also, I decided that this year I will bake my very own birthday cake. This is because in China, their cake is definitely not nice, the cake is mostly made from sponge cake with whipped cream as the icing which make me gauge when i ate it. So, to solve that problem, I decided I'll bake my own cake & decorate it myself. The day before my birthday, I was busy baking & decorating it.Very much satisfying especially it does taste nice and when I posted it online, I received lots of good compliment. So, not bad for a non professional baker like me. This also make me fire up to try my hand at baking different type of cakes and using different type of decoration material in the future.


I received my birthday gift a month earlier from Kris because we were in Denmark at that time so he decided to get me an early gift because he know when in China, it is difficult for him to buy me a gift. He gave me an ipod!hehee..I like it very much though it is consuming most of my time now. Me & gadget is not always a good combination but I love to explore. Too bad that I need to pay for most of the downloading of application so at least I have my limitation there. I also received two surprise gift from Kris's friends which I really did not expect at all. One of it is an Hermes 's scarf! Gosh...I for sure will not buy it myself because its damn expensive! So, I am so happy that I got it as a gift and for sure I will treat it very damn well.Hahah...


We end up the day with a nice and cozy dinner at one of the Italian restaurant in town. Had a very nice meal with a quiet surrounding ( an environment that you will seldom found in any Chinese restaurant). I really have a lot to thank for in my life because I am blessed with so many wonderful friends who never forget to wish me happy birthday every year. Also I am grateful to my eccentric family who in a weird way always there for me. I also have so much of gratitude for having such a wonderful, supportive and a loving husband whom I love dearly. At the end of the day, it is not about the gift or cake or dinner but about what I have accomplished and received in those 32 years of my life. So many experiences and downfalls in those 32 years and each one of those experiences and downfalls has made me a stronger person. It teaches me that life is very unpredictable and unexpected most of the time and how you deal with it or come out from the bad situation, really show what you made of and I for sure know that I am made from steel!Hahhaha...


Looking forward to another birthday next year!
