Peanut butter chocolate chip cookie

I seldom bake cookies because frankly, it requires too much time. U need to make the dough, roll it, cut it, bake it and find a pretty nice jar for it. It require more work if you decide to decorate it with some topping. But for a long journey, cookies is the best as compare to cake because it does not get spoil that fast and even if the road is bumpy, it can still be in shape when you get to the destination.

My last road trip with my sister and her kids was to Jb & Singapore. So, I thought why not I made some cookies. Knowing my nephews & nieces passion for cookies & cake I decided to make peanut butter chocolate chip cookie. My nephew like it & he said that he even can taste the chocolate & peanut butter although he got flu! Hahhaa...I take that as a compliment.

So, the day before we leave to Jb, I took out my ingredients and start baking.
Main ingredients are of course butter (this time I decided to use Lescure butter from France. I love to experience using different type of butter especially the imported one), flour, sugar and egg. For cookies, it is better to use butter instead of vege oil because you won't want your cookies to be soggy. Hehhe..and more white sugar then brown (if you used both that is) because we want the cookies to be a little bit crunchy although this cookies is rather soft. Extra ingredients will be cocoa powder (I always prefer Van Hountan..a bit mahal tapi puas hati),  two type of peanut butter (creamy & chunky), vanilla essence, bicarbonate soda (to eliminate 'bubble or trap air' inside the dough), chocolate chip (..obviously) and little bit of milk (to give that milky taste).

 Mix all the wet ingredients. Start with sugar & butter. Once the mixture is creamy, add the egg & beat again. Add the peanut butter and vanilla essence. And a dash (1-2tbsp) of milk.

 I already prepare the dry ingredient consist of flour, bicarbonate soda, cocoa powder and salt.
Pour the dry into wet ingredient. You can either mix it with a hand mixer or just use a spatula. Make sure you mix it well. When everything is well mix, you add on the chocolate chip. Mould it properly so that the chocolate chip is well embedded into the dough.
Now the dough will be a bit soft. Wrap it in a string wrapping and put it inside the refrigerator for 1hr. Why? Ni teknik untuk mendapatkan cookies yg soft tapi x cepat pecah. Senang cita, x rapuh la & x keras also. This will resulted in a soft and moist cookies while a bit crunchy. Just nice la kira nyer.


 So, after 1hr, you take a small chunk of the dough and rolled it like a ball. Then flatten it a bit like the picture above. Masuk dalam oven for 20-30min in a 175C temp.
Finally, you get yourself a tasty and soft chocolate chip peanut butter cookies. Oh ya..I decided to sprinkle some chocolate melt on top of the cookies. If you decide to do the same, you need to wait for the cookies to cold down before do it or else the chocolate will melted away. Nanti look very comot your cookies. Then wait for few minutes for it to dry off before placing it in a cookie jar.
Tada...siap sudah. Err...sowi termasuk plak gambar pudding ni. Hahah... The recipe resulted with 2 cookie jar ard 30 pieces of cookie (I think la kan pasal x kira when I bake it). Here is the recipe (cara2 nak buat dah ader kan) & you guy can try for this upcoming Christmas day!!

Ingredients:

  • 11/2 cup flour
  • 1/2 cup cocoa powder
  • 1/2 tsp bicarbonat soda
  • 1/4 salt
  • 1/2 butter
  • 1cup brown sugar (if you used both brown & white sugar then it be 1/2cup brown sugar & 1/2cup white sugar)
  • 1/4cup peanut butter (you may put more if you are truly a peanut butter lover like me..heeh)
  • 1 egg
  • 1tsp of vanilla essence
  • 2 tbsp of milk
  • 1 packet of 200gm choco chip ( I don't really have any specific measurement for this. For me, you can put as much as you like!)
  • For the melted chocolate topping, just melted any kind of chocolate you like and sprinkle it over! Simple. You can make this recipe your own personal one..hahah..( Oh ya..if the chocolate is not 'runny' meaning x cukup watery you can add a bit of warm water like 1tsp ke & see whether you need to add more. Don't ever use cold water/ milk, then your melting chocolate will be a chunky one!)
